My new pit was delivered today. Going to season it later after I take it to the car wash to get all of the oils and manufacturing stuff out of it.

First cook real smoke won't be for a few weeks, but I'll play with it a few times to get the feel for it.

Got her seasoning now. Temps holding steady at 225.

Another hr or two and I'll crank it up to 350 then let her cool down slow. She'll be ready to cook after that.

I'll toss some chicken legs, ribs, and a pork belly on it during the week.
First big cook will be a whole hog Sept 9th.
