For two trailer combinations, the first off the truck must be a fifth wheel type, in Alberta at least.
Not sure about Canada, but double/triple trailers are not legal everywhere in the states. I had to get an endorsement on my CDL for it with tractor/trailers.
If its legal, I don't have a problem with it.
What I would not haul? Anything my brother or sister-in-law asks if I can haul
Many times I see a 3/4 or 1 ton pulling a travel trailer and a boat trailer here in WI, MN, IL and IA. Does anyone know if this is legal? If it isn't, there surely are a lot of violations being disregarded by the "law!"

Depending on jurisdiction. Here for example- that's perfectly legal provided the first trailer is a double axle fifth wheel. Second trailer can be any hitch type pull, but the total combination cannot exceed 75 feet.

Its the same in Michigan as well.
If I remember right here in Mich you can only do it at night
