I had a low coolant light come on at start up and go off for a few weeks now.
I did some searching and it appears it's a common thing with the EGR/Regen process on the 6.7L Cummins motors. Depending on your load/driving you can have this light come on at 20-30K miles. I had mine come on at 22K miles and I don't tow..
But since this seems to be a thing and you'll need to top of the fluid level, thought I'd share a few pictures.
You can top off with distilled water, but after seeing how much of the 50/50 pre mix I used (Half bottle) I wouldn't suggest it as you'd be 'watering down' the coolant.
I used factory Mopar stuff, got it on Ebay for $23 shipped to my door.

If you look at the white reservoir near the passenger side battery, you can see the 'MAX LINE' is pretty much the seam of the reservoir. Mine was about an inch or so below the "MIN LINE".
And after replacing the batteries after 2 years, I just helped a friend replace his batteries today on his 2500 and since I was there, topped his off as well.
Just some information hoping to help someone who may run across this soon.
