Does anyone know if the rear controls work on the uconnect 3.0 if my steering wheel doesn't currently have them?

Yep they sure will , that is if your asking about the audio controls on the back of the wheel .
You can simply upgrade your steering wheel with one that has the audio controls already , sometimes you'll find leather like thisone .
You can also just install the audio controls kit to your existing wheel . This kit is available from www.allmoparparts.com for about $125
