Why would they owe anything more than fixing the damage to original condition and a loaner vehicle until it's fixed?

They don't but it is a smart business move to go above and beyond due to the inconvenience and damage to ones truck... It's marketing and a way to save face. In most cases if not all with customers (except ******* customers) they care more about how a issue is fixed not the fact that there was an issue.

Because the damage, even though repaired, may affect the value of the vehicle were the owner to try and sell it or trade it somewhere else.
It's called diminished value. If the damage could impact the value of the vehicle they should pay for that difference.

UPDATE:::
Dealership still has the truck. They were driving to another location and somehow messed up a rim and brand new tire.
The dealer is paying for them to rent a new truck. Has been quite a while to let the dealership hold on to a truck, especially if they can't take care of an $80,000 truck.

On the plus side he may hit a point where he is ahead if he puts enough mileage on a loaner instead of his own ride. Had that work in my favor a few times...
