At 80 MPH I was around 2300-2400 RPMs. I had a Hypertech tuner, which I recall programming the 'transmission shift points' but not positive.

The gears really helped make the truck drive-able around town again, where I did 98% of my driving (hence I wanted 4.88s).

With 35" tires (quick use of my handy dandy calculator) you should be around 2300 RPM (this calc seems to run about 80-120 RPM high, as it doesn't account for Torque Converter / other slop / lag). I think that's a damned fine 80 MPH RPM.

I have the diablosport tuner currently installed, but don't think it has the ability to change shift points. I might be wrong on this cause I haven't really explored all it's capabilities. Would it hurt if I were to install the new gears and not change the shift points??

Not at all. The point of changing gears is to get your MPH / RPM ratio back closer to stock.
