Does the adjustment of the dipstick to accommodate long tube headers effect the dip stick accuracy ??? And what is the exact amount for oil and filter change for oil ??

Exact oil specifications for your truck are in the owner's manual. And unless you had to shorten your dipstick, it's still going to be the same. If you take a two-foot-long dipstick and bend it every way that you can, it's still measures 2 ft long. Besides, no one ever adds the exact amount anyway. If it calls for 6.7 quarts, you are going to put 7 quarts. Plus there's still a little oil left in the motor because you don't get out every drop to start with.
