Back in high school I went to a dealer and test drove a lifted Chevy truck. Around here dealers just throw a dealer tag on the truck and hand ya the keys and let you drive it without the salesman there with ya. So I took it for a spin, I noticed a switch on the dashboard and wondering what it was I flipped it. The truck died right there. I called the dealer pissed off cause I was broke down. Turns out the switch was a kill switch, lol...the dealer didn't even know that it was installed.

possibly a valet switch for an aftermarket alarm system? It's so the alarm and junk doesn't go off and stuff when they valet it.

no idea, I was just checking out some aftermarket alarms the other day and saw that feature so I googled it, they say to put them in an unseen or not obvious place

maybe a switch for the remote wire for an amp? does it look like your truck had an amp/sub at some point? trace the wires and see where they go. that'll tell you everything.

Sounds good! I was asking because my truck has an aftermarket remote start, and the switch under the dash turns off the remote start.
