How much of an increase is there if you take .030 of the head mounting surface?

10 hp or so.

Will take the compression from 9.6:1 to 10.27:1

Would it be worth the time money and effort of doing it? Local shop said they would do it for 120 if I brought the heads to them

$120 for 10hp sounds like a good deal to me. Do you not have to do anything else to the motor once taking the .030 off? If not, then that's a good deal to me. Worth my time of taking off and putting the heads back on.

Just wanting to clarify if all you need to do is remove the heads, get them shaved, then re-install them for an easy 10hp? I have a local shop that will do it for $125.

Thanks!

Oh, and the same shop said they'd clean, bore the block .030, and install cam bearings for $250 if I wanted to do a rebuild or stroker on it... is that a good deal?

5.7 I was asking about mainly but I believe it should apply to any motor

you should be warned that milling the heads, changes the distance between the intake manifold mounting surfaces. I don't remember the ratio of how much off the deck, requires so much off the intake port side. And 0.030" may fall just beneath that threshold for concern, but I'd be careful nonetheless . Hopefully the machine shop has a good machine and a conscientious machinist operating it, because if they aren't they can mess up the engine's geometry and you'll pay hell getting it corrected. You can end up with intake sealing problems, and vacuum leaks that can be hard to pinpoint.
