Metal side towards the heads, it will be obvious when you see them. Start the torque sequence on the bolts from the middle and work your way outwards. It's gonna get real tight in spots so you won't be able to get a torque wrench in there, just crank them tight. Get yourself a hinged gear wrench that fits the bolts, it's the only way on some of those suckers.
