I've done a few fronts but never a rear any insite would be good assuming the rotor will come off once I remove the caliper and then just pound it out right?

I have to remove the disk right? My local shop said I didn't have to?

You probably could leave it on.

If you go they the trouble of removing the caliper you mine as well remove the disc only a retainer clip keeping it on at that point. Then you can work on it on a table.

Yes you'll have to remove the rotor, it's pressed into the axle shaft flange, not the rotor. Also the rear can be tricky, you either have to partially disassemble the park brake shoes, or remove the axle shaft, in order to sneak the stud out.
