I believe it is a 408 for the 5.9

408 is the way to go, but there is a 426 stroker kit available, they just cost quite a bit more because they require more machine work, clearancing, and balancing. Plus, the 408 will actually put out more power and can be boosted, and they also 10x longer.

Pat is right, although, I'll expand on the topic a bit.

The 360 can be taken out a maximum of 426, but it's not recommended. The issue just like with any motor is heat. As you know, the block of the motor has "channels" if you will in which water flows through them absorbing the heat. In order to work correctly, those "channels" (water jackets) need metal between the jackets and the combustion chamber so that not all of the heat absorption is left to the water alone. Water can do a great job of absorbing heat, but it can only do so much when the cylinders reach over 2000*F. At that point, increased wear on the cylinder walls, pistons, and rings is what will get you. It's not a large issue, but you can expect to be spending a lot of time honing the cylinder walls out, sleeving, and installing new rings. There is a reason why you see race motors getting rebuilt all the time.

Also note that you'll usually raise your compression ratio with a build like that and the higher the compression, the more wear you'll see on the motor. This is another reason why forced induction is so popular since it creates reliable power and is usually beneficial to the motor itself. This is all assuming that it's been done the right way though. :D
