So, I just bought a 2.5" level kit for my 2000 2500. Not sure if that will raise the front too much and I will need to add a leaf in the back. Should I just wait and see how it looks once leveled? if it is uneven would the leaf be the best way or a block?

Park on a level surface and measure the front end above the wheel and the back end above the wheel and see what the difference is.

All these trucks have a rake to them, hence the level kits lol. Op if you want it level you might not need anything in the back unless the rear springs are sagging from use over the years or if u want to keep the factory rake it came with.
