I want to cut out the cats and the muffler on my truck to replace them with straight aluminum pipes. Does anyone know what size pipes I need? Width and Length?

Easiest way to make your truck sound like **** like you're trying is to use this:
JEGS Performance Products 31020: Off-Road Y-Pipe 1994-99 Dodge Ram 1500/2500/3500 & 1/2, 3/4, 1 ton 3.9L/5.2L/5.9L (except CA) | JEGS
And then cut the muffler out and replace with 2.5" pipe.

That's assuming you have a 94-01 v8. You haven't posted anything about what you actually have.
LMAO, I agree, I've run straight pipe and sounds like crap along with losing power.

OP: Get you a nice muffler and do it right, if you want noise then I suggest a Glass Pack or Flowmaster Super 10.

Over stock it'll prob feel more powerful but that's all a result of flow characteristics which get complicated. Don't say anything about backpressure because that's an uneducated way of understanding exhaust theory, there's much more to it than that.

Dyno results have shown less than 3hp/tq difference between different mufflers or lack of but the way they flow does have an effect on where you feel that power.
