I think what he's saying is that the hole cutting took less time than the wheel removal. Not that the wheel didn't get removed because you have to swap in the wiring harness no matter what.

Have them check your clock spring also. It it isn't reading the rotation of your wheel correctly it will affect the traction control and cruise. It will think that you are turning while you are not and when it doesn't detect different speeds for the wheels outside the turn vs inside it will...

The new wheel doesn't have the gear buttons. Do you need those? If so you could take them off your current wheel and put them on the new one before you install it.
The new wheel will have the correct harness inside it, you should be good to just swap if you don't need the gear buttons.

I believe you just plug a wire into the back of the radio in the correct spot and the CD player gets detected automatically. Can you take a picture of the connections on the wiring?
