Is there any chance you missed a ground or have a corroded one somewhere ? Might try checking elec connections for a bent pin or one that did not seat properly.

That is what you want ,it opens when near 200* then shuts near 195* . T-stats have a spring that expands or contracts at specific temps . Hope this helps a bit.
Swap out your rear control arms from those twisty stock arms . I put Clayton arms on my truck and that hop disappeared, plus it just has a tighter feel to it now. IMO this is one of the most impactful handling mods for these trucks .
Get some pb blaster or other penetrating oil and spray one component at a time while someone else does wheel duty , ball joints ,sway mount bushings ,end links ,tie-rods, control arm bushings , and any thing else you see move with the wheel.
