I have a 2012 1500 with the 5.7 and 3.55 gears.

Ever site I go to gives me a different number.

I know that the trailer I want, which is between 2700 and 3,000 pounds, can handle it. I am just curious what my specs are.

thank you

About 8K lbs although having 3.55 you might not like towing that through the mountains. (see PDF list of all the weight ratings). The payload police will chime in you'll run out of payload before you get to that, it's the GAWRs of 3900 you don't want to exceed.

This. Don't worry so much about payload, your concern should be not exceeding GRAWR.

The payload specific to your truck is on your door sticker. Everything you find online is kind of an estimate based on similarly equipped trucks. The payload rating on the door sticker is for your truck as it rolled off the assembly line. Keep in mind every floor mat and nerf bar that has been installed after it left the factory takes away from that payload number. As does every person, piece of firewood and cooler you put in the truck.
