I am sitting at Valvoline getting an oil change and they say my power steering fluid is ready to be changed (I have 61,500 miles on ny truck). I did a quick search of diy and I am seeing that the Ram 1500s use an electronic power steering system, not fluid. Is this correct?

I believe the electric power steering started with the '13 model year 1500s, and in all of them since. There is nothing to service with the steering rack.
Valvoline drive through lube racks have a sorta script/check list they follow when checking your vehicle over. I doubt they were trying to scam you, it's a prompted question based on the mileage of your vehicle.

That is what I was hoping. I wonder what they would have said/done if I had agreed to it...

The tech would go "do it" in the back (vape some weed juice beside the dumpster and check facebook) and come back tell the advisor that the oil was horribly dirty and he had to use twice as much flush fluid as normal. Tell the customer to come back more often he says!

Imagine how many people per year pay for services that are not preformed on their vehicle. good on you OP for taking 2 minutes to Google this!

Honestly, it is very rare that I agree to any of the extra maintenance at one of these quick oil change places.

I'd be curious also to know what they do on the "recommended" Power Steering fluid service. SURE glad OP had enuf common sense to check, because that is definitely a Hmmmmmmmm moment. I would neva use any QUIK Lube Place, but OP's truck, but maybe he may wanna find a different place, LOL. All IMHO.
