Down one quart of oil, then put a quart in it, now it's a quart too full

Okay, but it certainly didn't run just fine as the previous comment said with 7 extra quarts.
Sure didn't. Over the years I've encountered a number of over filled engines, but the majority were only over filled by a quart of oil or less. I can see, depending on the engine, this not causing an observable problem. But once you overfill to the point the rods and crankshaft is dipping into the oil and slinging it around, there is going to be some kind of major issue. Engine oiling systems do not like air bubbles in the oil.

I had a '92 Suburban. I was going on a camping trip and needed a quick oil change. Went to Valvoline instant Oil Change. They tried charging me more because they claimed it used 6 quarts of oil. I changed my own oil several times, so I told them it was 5; the 3/4 ton uses 6. So I didn't get charged. Went home hooked up and drove off with the trailer. About 3/4 the way there the truck started smoking bad. I pulled over. Oil was blowing through the exhaust and covered the front and side of the camper. I checked the oil and sure enough it was at least 1 quart over. I limped to the campground and waited for it to cool down. Then I had to dump a gallon of milk, cut the top off, and remove the overtightened oil plug. So my first day camping was draining oil and cleaning up oil on my newly waxed camper. VIOC refused to do anything. They offered a few coupons for free oil changed (which I told them where they can stick those.) Numerous calls to corporate didn't help. I'd say the truck lost power after that. Might have been some engine damage or it might have damaged the exhaust. I ended up trading the truck in months later. I went back to changing my own oil.
I wonder how much oil they would try to put in for my 1971 Volkswagen Karmann Ghia if I would ever take that in to them? The 1600cc flat four engine in it only takes 2.5 quarts.
