Looking at the RS kit, I noticed there is nothing but the new latch and wiring harness (besides the fobs)
I have ALPHA OBD and if I remember right there is a hood latch alarm settting (Y/n).
has anyone just gotten 2 new fobs and programmed the RS without hood latch setting.
Thinking it might be like the "security alarm" that 2 to 3 settings were needed to activate

You don't need a kit. You can either jump the contacts for the hood latch or for about $40 you can buy the latch with the switch. I bought the switch for my 2017 just so the engine wasn't accidently started with someone working under the hood. The harness was taped right next to the latch. You can use your present fobs by moving the panic button contact to the blank button and using it to start the truck. I bought 2 new fob cases with the remote start button present. I think I spent $12 for the 2 cases. These are empty cases with just buttons and contacts. I then programmed the system using the ALPHA. If you do it yourself just realize that the remote start won't work until the truck has been driven a short distance. Good luck.

As someone who has accidentally started the engine with the hood open multiple times I would say get the new hood switch.

I have a 2013 2500 ST. Should there be a wire near the existing hood latch that just isn't plugged in? I haven't seen anything there that looks like it isn't connected. Anyone got a picture?

Edit: I just found instructions on line and a harness is needed to go from the new latch to the BCM.
