Cold radiator water but gauge says engine hot

My 2013 1500 V-6 Tradesman just got a new radiator install. After install ,truck sat for 4 days with coolant drained. When came back, filled up with plain water to check for leaks. None,
and on test drive, gauge said 230, and "Engine Hot." Radiator cap was cool, so slowly opened, and cool water bubbled out. Specs say 14 qts, and was only able to add 7 qts. "101, over."
(Vietnam radio code expletive). Is it a faulty Coolant Temp. Sensor or Thermostat? Radiator was replaced because of a crack in Chinese plastic.
{ p.s. After so many You Tube videos, did the hose -hot test . . . You Tube video says I have a Thermostat stuck in closed position. Now, how to locate the Thermostat, and cannot find a video on that - yet. YOU TUBE appears to be better than this Forum ... }

Sounds like the thermostat isn't opening up. Could be stuck closed.

You can pull it out, and put it in a cup with boiling water to see if it opens up.

Make sure you turn your heater on and cycle the coolant through the heater core when doing any radiator work also.

Never should have filled it up with city water, you need to drain the block and radiator and refill it with 50/50 distilled water and OAT coolant, city water is very corrosive to the cooling system.

The thermostat was most likely air locked and it won't open with air on the wrong side.

Fill it, bleed it, fill it some more, then run it.

I don't know if there is a bleed port on the 3.6 like there is on the 5.7.

Yes follow the top hose from the rad to the engine. It goes into the thermostat housing. On top of that housing is a screw like disk, that's the bleed valve, open it until coolant comes out then close, that should burp it.
