Hello all. My wife and I just purchased a new to us 2019 Ram 2500 Cummins with the 68 RFE to pull our 20'x8' vnose trailer with our harley's inside. I'm not looking to increase performance of the truck just make sure we don't issues while traveling, ie: preventative maintenance, durability, etc.

Welcome...

Just follow the manual for recommended maintenance and enjoy. Keep an eye out for the upcoming recall on the CP4 fuel pump so you can get that swapped out when it happens (will be next year some time).
And last but not least avoid getting advise from social media, they will have you convinced you need to completely re-build the whole thing to make it reliable... :)

That's part of the reason I am here. Started looking at ATS Diesel due to a diesel mechanic friend telling me to get rid of the thermostatic bypass for the trans cooler and down the rabbit hole of 68 RFE, lions, tig......err wrong show.

Exactly. That bypass is a solution to a problem that doesn't really exist. Chances of the trans thermostat failing are pretty slim (don't think I've actually seen one fail). They all say the trans runs cooler but I'll argue it takes for ever to get up to operating temp where it was designed to run with a bypass.
The trans is fine as long as you keep it a stock power levels. All the horror stories you will hear are from people who tuned and ran up the HP and now have issues.

I would suggest to get your diesel fuel at a reputable place that sells a lot of it, and keep your fuel receipts in case of a problem. If you travel in the winter into colder climate areas, make sure the fuel is "blended" for cold weather.
Enjoy the truck.
