Sorry if I’m beating a dead horse here.
I don't have a RAM but I do have a 17 charger with a 5.7 hemi.

I recently installed some BBK long tubes and a couple hundred miles later I have an exhaust leak due to the supplied bolts backing out.

I need to get back in there and repair the issue unfortunately.

What gasket are you guys recommending?

And also what header bolts do you guys recommend?

Remflex 6022 gaskets. If the bolts are backing out on you, tighten them tighter, but are you sure it's the gasket leaking,BBK's are famous for cracking the welds at the flange

ARP or the SRT bolts.
What ^^^ said about the gaskets...
Also consider laying a thick bead of ultra copper rtv on the collectors where you bolt to the rest of the system. This helps to keep leaks away from that area which can develop.

Ill order the Remflex gasket tonight,

What’s the better buy, the chrome moly ARP bolts or the stainless steel ones?

Either set of bolts will work, just use a little bit of anti-seize on the threads.I'm cheap and most header gaskets only call for 20lb-ft,so i'd go with the cheaper chrome moly. Do not bend the Remflex gaskets,as they're a thick graphite gasket and will break if you flex them to far.
Spring for a small bottle of hi-temp anti-seize if you don't have any
