I am toying with the idea of switching from my 275 60 20s to something in the 265 17 range to improve towing has anyone tried this

Dropping rim size i personally don't think will help with towing. Your tire size will matter the most. Bigger tire, lower engine RPM.

You are only losing 1” of diameter with that change. Really won’t be noticeable.

I you are wanting better sidewall characteristics, an LT245/75/17E is a stout contender.

If you are looking to increase towing capacity, tires won't help. You towing capacity is maxed at what is listed in your door. Tires can lessen the towing and payload capacity if replaced with some other sizing but that's it. Only way to increase towing capacity is to move up to 2500 or 3500. If trailer is within towing specs but not pulling well, you may have a bad sway bar. Last idea, a 5th wheel will tow better, again had to be with specs of towing truck. Good luck.
