I am running Toyo RT 35 x 12.50 x 18R tires with no rubbing and have over 30K miles on them with plenty of tread left.

Tire choice is hugely dependent on where you live and what you are doing, up here in Northern Alberta a lot of people end up with Duratracs on their rigs due to the amount of winter driving and the insanely slippery mud we have once winter goes away. Even in the middle of summer there’s still mud so you need a fairly aggressive tread like the Duratrac and good winter traction which they also have.
I am up grading my stock Duratracs to new 35x12.50 ones at the end of the summer.

How about the cooper at3’s?

The tire uses a 2-ply sidewall and not a 3-ply for added protection. The trails around here are made up of volcanic rock with boulders, some of which are quite sharp. Not the place for thinner sidewall tires.
