Is your daily use just short trip city driving? If so, I wouldn’t recommend the eco diesel. Short trips at city speeds will plug up the DPF and EGR systems.
Daily commute is all highway
125kms round trip

or I work out of town it’s the same all highway
I put on about 50,000 Kms year

That's a decent enough commute. You likely would not plug up DPF or EGR systems. In this case you could go either way, it really depends on how comfortable you are putting that much weight behind a 1500. Personally I wouldn't, I would go for the 2500.

I sold my ‘19 Big Horn with 3.92’s and bought a new ‘21 2500 Hemi earlier this year. The ‘19 was more nimble and could blow the doors off many sport sedans but in the first mile of driving the 2500 I knew I was in something much more robust. I’d recommend you go with the HD.

I’ve towed with a 1/2ton…different brand and truck got awkward close to max towing w a stiff crosswind. I have a 3/4 ton now and yes gas sucks but the price for security towing 8000 lbs is vastly improve. Also ask me what happen when your trailer separates from your truck which truck would have in an emergency, happened to me w my 3/4 ton. She Manhandled my trailer safety to the side of the road, my old 1/2 ton would of lost
