Gooseneck height not important like bumper hitch?

Bumper pulls need to be level or close enough to it. You can get drop and lift hitches to achieve this. What about goosenecks and fifth wheels? I've read about modifying trailers to keep the bumper off the ground and having to shop with bed height in mind, but is leveling the trailer as important for the bed mounts?

It’s no more or less important; you level the trailer for several reasons such as contents, clearance front/rear, weight distribution on the axles in some cases, etc.

The how is different. Goosenecks are adjustable as are pin boxes on fifth wheel trailers. So the adjuster is on the trailer not the truck.

It’s a topic on some forums because newer trucks are so much higher than older ones that sometimes older trailers have insufficient clearance for newer trucks. Then you either tow it nose high or put a lift on the trailer axles. Newer trailers are built taller generally to solve the problem.

If you have two or more torsion spring axles its important the trailer is close to level so all axles are equally loaded. For example if way high in the front, the rear axle is carrying more load, and your rear tires may even be overloaded. Also, the factory sets toe-in at level attitude. Nose high would reduce toe-in slightly.
