Hola, best food in the world!
Wife thinks I'm strange eating Mexican food 3 times a week, I tell her Mexicans eat it every day, what's so strange?

Lord I miss Tex-Mex in Texas!
We have several good restaurants and I make some dang good food. My Birria tacos are spot on. Over there years I have taken a year and learned to perfect different foods. Mexican food was my first. We make tamales and our boys love Pupusas, but those are Salvadorian.

I am afraid that we will have to disagree on
food Mexican/American food from different areas.
On the California side of the Baja Mexico borderline, many of the eating places that serve Mexican food, have long lines of customers waiting to get food. i am often in that line.

I have tried Tex/Mex a few times while crossing Texas on I-20, i guess they just season the food differently, i would not stand in line for it

Tex-Mex is just that Texas version of Mexican food. I am not a huge Tex-Mex fan. I prefer the authentic stuff, so that usually means I am making it myself lol. Yes the Baja side is really good. Fresh too. I gauge a restaurant on 3 things, salsa, rice, and do they have charro beans. Anyone can cook it, but it takes someone who really knows the culture and spices to really make it taste authentic.
