I have a 2014 Ram 1500 and was wondering if there is a way to lock the doors with the engine running? (So for example, stopping at a convenience store). Thank you.

Use the power lock the doors once you put the truck in park. Just use the handle to open the door(it self unlocks just the driver's door). Then push the lock stem down by hand, and close the door behind you the truck won't "unlock" the doors.
A good locksmith shop will cut a full-size key from the stubby version that's inside the fob.

I have the key fob and there’s no emergency. I just want to voluntarily lock the door without shutting engine off when going into convenience store (and avoid truck being stolen).

You'll need a second fob to do that.

FYI locked door not prevent stolen if somebody really wanted the vehicle, just saying.

I've done it on occasion, when I need to run into the store to get something, or get a fuel receipt when the gas pump is out of receipt paper.

If it's even remotely hot outside and my dog is with me, I wont leave him in the car for even a minute without having the A/C on and engine idling.

Exactly like Crash68 said above in post# 2

Just leave the fob plugged into the ignition socket and remove the little metal emergency key from the fob. Hit the power lock button while your still sitting on-ass in the truck (everything will lock). Then get out of the truck (the handle will automatically unlock the door when you pull it).

Then, while standing outside of your truck, and BEFORE you close the door, push the little lock thingy stickin up outa the door down (locking the door), and close the door... That's it, your done! You are now standing outside the truck, with the engine idling, and the doors closed and locked.

To get back in, use your metal emergency key (that you took out of the fob in step 1), or a second fob.

I keep my fob in my pocket. I get out of the truck, close the door and hit the lock button on the handle. Easy peasy. Truck stays running, cluster gets mad because the key has left. All back to normal when I get back in.
