I would have to wager your speedo is not 100% correct. Every vehicle I have put larger tires on and had the speedo corrected by a tuner took a few tries of of recalibrating it to get it dead on. I have never had it be exact on the first calibration and always required some configuring to match my GPS devices that tell me how fast I am really going. Then there is the factor that the speedo gets off as you loose tread. Although, one big thing that you just stated is Toyo's, which are known for being the heaviest(and best) tires out there. Heavy tires drain power and mpg due to how much it takes to turn them.
You are absolutely correct about the speedo calibration not being correct. I had to mess with it to get it to line up perfectly with my gps. I'm sure the toyos have a lot to do with it, but I do love the way they work. I may just end up dealing with the mileage as I really do enjoy just about everything else about the truck.
