In general I’d would advise against going with something like this because it prevents you from easily upgrading any part of it. MTX used to be fairly decent gear but that whole setup seems like one big compromise.

A single quality 12” will get you better and cleaner bass than two mediocre ones being pushed by an undersized amp. I’m not sure if they are available in Australia, but the Audiofrog GB12D4 is a great sounding sub that has high efficiency. That means it will be louder on the same amount of power. Pair it with a Zapco Z-2KD amp and it will cleanly rattle your fillings out in a small sealed box.

Is it really that expensive to have someone build you a custom enclosure? I could recommend a few but without knowing what you can get locally down under I’d imagine the shipping would be crazy expensive.

I’ve heard that some high end European brands that are expensive in the US are much cheaper in AU. Brands like Sinfoni, Audio Development, Brax and Helix. Is that true?

With the Alpine system I would go with Infinity/JBL ~2ohm speakers for your doors/dash since the factory stuff is going to be 2ohm. Just for fun I tried a 4ohm speaker in my Chally's Alpine system and the volume output was pitiful, as expected, but that was during my Infinity install just to see what the Alpine amp would do. If you want something more pre-fabbed for your sub needs I would suggest the JL Stealthbox. I don't personally have one as I'm running a foxbox, but I've heard several in person and they blow those MTX thunderforms out of the water.

Those thunderform Mtx boxes work fine. The amp in them is matched to the subs. You will definitely know it’s there but don’t expect it to blow the windows out of your truck.
