What would be the best type of thermostat to replace for my 08’ 5.7? The parts store guy saying 203 degrees one

Depends on what you're going for.
If you're keeping it stock, head to your local dealership and get a stock OEM replacement.
If you're looking for better, I've seen many on this forum discuss 190 and 180 t-stat replacements.
For me, I'll be going to a 190 this coming summer when I get tuned and do fan adjustments.

Regardless of what you select as a temp range, ensure you bleed the air properly.
I used to have a 6.1 and did a 190 t-stat upgrade, and bleeding the air was a ******.... took a couple of go's to get it right so my temp didn't spike.
Once it was dialed in, it was smooth sailing!

just make sure you burp it. just like after feeding a baby. Got to get all the air out of the system or there will be problems, later.

if you can't get that plug out, look on the right side of the water pump,
there is a sensor & wires.
That will also work as a bleeder
The temperature sensor you are talking about is under the AC compressor in a 5.7L Hemi truck. He would be better off not trying, it's too much effort to attempt rigging anything to try that.

This would be best, trust the process.

Yes ,that is the temp your engine will maintain +or- a few degrees. Also what goes into the heater core.
