It has a 3:21 rear axle ratio which tells me why it was getting 18/19 mpg at 60 mph. Does that make sense or am I looking at it differently.

Naw a 3.21 still wouldn't get 18/19 mpgs, someone can correct me if I'm wrong but I'm pretty sure it would get worse mileage if anything. The bigger rear axle ratio will help spin those big tires making it easier to move the truck, thus better mpg. That's why some guys go to 4.10 or 4.56 gears with their lifted trucks.

Plus 3.21 is pretty light for running 35's

Correct. The smaller number "3.21" means that you have less power with bigger tires "35s" meaning more fuel to make it move. Plus the weight of turning bigger heavier tires, wind drag due to tire size and air going under the truck due to increased height. I had 37's with 4.11 gears and 5th gear in my 5 speed manual became useless. At 70mph it would barely accelerate in 5th gear on flat ground floored.

That is really not a true statement. It would just take longer to get up to speed.

Overall running a 3.21 is going to provide higher mileage then a 4.10 because at a given speed the 4.10 is going to cause the engine to run at a higher RPM, therefore using more fuel.

I hit it and it sat down in the rear, but not as hard as I would of thought. But I was under the impression that the lower rear gears would give you a better mpg, not so good for towing but when I drove it this wk-end it had to me all the power I needed. I don't know you guys are the experts, please tell me, as I would like to possible put this in the drive way as it has about $6000 worth of stuff on it. Thanks for all of your help.

It's not a bad ratio, depends what you plan on doing with the truck? Lot's of towing or occasional heavy towing? Plan on leveling/lifting and bigger tires? If you just want to leave it as is, that ratio is fine. Some guys find it hunts for gears a little. I have the 3.92 and I like it, personally I think it spends more time in MDS because its actually less load on the engine to roll down the highway. But with the 8spd you'll have plenty of get up n go.

Not if the speed necessary to achieve the proper rpm for making power is 100 mph in drive. There is a point when you start to go backwards when increasing gear size. I don't know the scientific formula to prove it but I've seen it proven in real life several times. The faster the truck is going the more air it has to displace, the harder it works, the more fuel it burns. If my truck had 3.21 gears and 37in tires I would of had to drive in 4low so it would pull itself, thus reducing the gear ratio to a functional point.
