I'm buying 8x6.5 lug pattern wheels off of a friend but my 1500 has 5x5.5 lug pattern. My question is what is a solid wheel adapter to buy, and how small can I get away with buying?

I know Bora by Motorsport Tech makes the best wheel spacers that money can buy, so check with them for the adapters you're looking for. They will be able to point you in the right direction.

I've been running 1.5" Bora Wheel Spacers on my winter setup for the past three years and my spacers still look brand new.
