This is all in reference to a 2011 Ram 1500.

I was looking at Ready Lift's web page and it has a page that shows recommended lift to tire size. Here is what they have:

For their SST lift that is 2.25"F-1.5"R you can fit a 35" x 11.5" tire.
For their leveling kit it is 1.75"F you can only fit a 33" x 12.5" tire.

I purchased a 2" leveling kit from another retailer (Fat Bob's Garage). Should I be able to fit a 35" tall tire considering my front end is only going to sit .25" lower? Or should I just go with a 33" tall tire to be safe?

2wd rams come with a 275/60R20 from the factory that is a 33x10.8. With a 2" leveling kit would a 315/70R17 fit? Or could a tire that is smaller then 35"x11.5" fit?

The tire I am thinking about getting is a 285/75R17. I have only found Toyo and Nitto to make this tire but it is a 33.86"x11.30" tire. Just wondering if I need to play it safe or not considering I would have to buy this tire of the internet.

from what i have read you should be able to fit 35's with just a level. You could fit the 285/75/17 no problem. Honestly you could possibly fit that on stock suspension.

a 285/75R17 is a smidge under 34" (33.8*11.2). You should be just fine.

PS post pics when done!
