I have a 2000 Dodge Ram 1500 5.2 liter that won't accelerate properly. I have already replaced the catalytic converter thinking it was clogged but it's still accelerating improperly. Need suggestions on what it could be. I also have done a full tune up and changed air filter and spark plugs and everything.

Any codes showing up?

Could be:
bad O2
throttle position sensor
crank sensor

Does it rev up when you press the gas pedal?
Do you feel anything? Could be bad fueling.

Need some more info or a video

Hows the plenum? Edit...Just read you haven't done it. If it's not throwing any codes have you checked the fuel filter? Does it shift properly?

Shine a flash light down into TB and see what she looks like! If there isn't any codes I'm at a loss and you'll have to wait for other members.

Rev it in park up to 4000 rpm.

If it reaches it, that will tell you if the cat is clogged.

How much oil are you going through on a weekly basis? I was losing half a quart a week when my intake plenum gasket was blown.

This. We need to find out if your plenum is bad! Wonder if you could try letting computer reset and drive it around hard?

Edit: mario.macias575 I think Yeret is talking to the OP Scott. For you I'd suggest getting a 360 or another truck depending on how long your oil pump was going bad. Or be cheap and get another 318

Edit: Scott do you think we could get a video of this slow acceleration lol. I'm leaning towards blown plenum. What kind of plugs/wires did you install?
