Put the front end up in the air- spin the tires make sure there is little to no friction. then I would do the poor man's method of testing front end parts- wobble the tire either up and down, or side to side depending on diagnosing which front end part.

I put 500lbs of driveway salt on the rear axle in the bed. It helps put the tire to the ground and atleast move. Plus, if you get stuck stuck, you can always open a bag of salt and help yourself get unstuck!

Plenum gasket's are known to fail. Got my kit ready to do mine myself this weekend! 30$ from Rock Auto. Check all vacuum lines for leaks and I'd guess your plenum is broken.
Any other symptoms?
Does it really re-learn the PCM? Because everyday my truck drives with more power.. after I fixed the electrical problem. It would only fire 5/8 cylinders due to a distributor cap, and now that its fixed, sometimes it acts funky.

Has the plenum been changed?
My instinct says you have cross-firing. Make sure your plug wires aren't crossing at all- use the separators.
I've had my fuel pump run 7lbs of pressure and still run my truck... and that its not showing your fuel level makes me point at the pump. Can you rent a manifold and check pressure at the rail?
I would literally stall out at random times as well, but would hear a distinct whistle at various times, coming directly from the IAC- had the TB bare and saw it.
I am going to change the CKPS and check out why that might be leaking...torq converter perhaps? We shall see..

IAC will whistle at ya when it's ready to be changed- don't clean it, just swap it. That will affect your surging in low r's and idle issue.
Make sure you got spark to all cylinders, check out your intake manifold when you pull the TB off, and buy a new TB gasket!
