You need an adjustable controller that will come on around 190-200* because of your thermostat. While driving, your water temp should never be at or below 165*, so that means the fan would run all the time while you are driving. The Flexalite unit I sell is adjustable from 160* to 240*. You set it to come on at whatever temp you want, and it will turn off when it gets below that temp. It does cost a little more than the one you listed, but it is the type of controller you need for your setup.

I would set it about 5* below your factory thermostat temp. This will prevent the fan from running while you are on the highway, and will kick it on just before your thermostat opens up when you are driving through town.

do these things come with any kind of warranty?

they seem finicky and would hate to have to replace them every 6 months

Being honest, fan controllers have been an issue for a long time now. Some guys run them for years without an issue, and I know guys that have had to replace them yearly. I dont know what causes 1 to go bad sooner than the other, but it does happen. I used to run this same Flexalite controller. It lasted 2.5 years before I had to replace it. For only $45, I was happy with that.

^^ that seems to be the issue with every brand of fan controller too. I haven't seen a brand yet that constantly makes reliable units. My last truck had a Hayden controller on it when I bought it in '06 and it still works like a champ. But when I worked at the local O'Reillys, we were swapping a lot of them out for customers regularly

The v6 fan just plugs directly into the existing wiring on your truck. This controller is only needed on the 2nd and 3rd gens.

Yes but I want some way to control it so I can turn it on when I want like if the truck is off mostly for cooling down faster at the track
