Thermostat sticking open? But man oh man, that's a huge temp drop, even if the thermostat is stuck wide open. I'd pull it out, replace it and/or drop it in boiling water to check operation. (Check new one in boiling water to test before installation.)

Get a code reader on your truck to see if there are any associated codes with the throttle issue.

Does the truck run fine otherwise?

Edited to add:

This seems to be a problem others have encountered. The error message/incorrect temp indication seem to be related.

Idk why, it's really dumb but the sensor for the coolant in the water pump (directly next to the thermostat) will throw a code/message for the throttle body. I'm with @NETim as far as where to start with the trouble shooting, I'm just here to say you can ignore the whole "throttle body" thing, this is a cooling system issue.

Did your thermostat look bad? Mine looks new, as does the water pump. Only owned the truck few months.

I'm on my 4th water pump/thermostat in the 4 years I've owned mine. Many people report having issues with new water pump replacements giving out after only a few months and thermostats not working out of the box, yours could very well be "new" and still be going bad.

Yours is different. You seem to have a clogged heater core, not a thermostat issue. You didn't mention though... do you only have heat on the passenger side or no heat at all? Passenger side only means partially blocked. No heat at all may mean completely blocked.

If your engine temps are within normal range, you need a heater core. Normal range at operating temperature on a 6.7 should be between 190-200 degrees. It will fluctuate as the thermostat opens and closes, but should generally stay somewhere near this range.

If it got hot while driving and instantly cold at idle I'd think a head gasket, but this doesn't sound anything like that.
