I do the same as Ram1500 does above,then I get the wife to drive it ,while I follow it just to make sure the truck is tracking straight.
I left mine slightly off center to the passenger side to compensate for when I load the truck down with gear and my trailer.
But yeah just center it as best as you can. I made the adjustments on jack stands to make it easier to turn the adjustment nut but I bet you could do it with weight on it too.
Your truck looks great by the way!
If it to much to one side will it drive crooked?
