I have a 2009 1500 with the 5.7 hemi with 139k miles and it feels super sluggish under 3k rpm. Once it gets above that it takes off nicely. But from a dead stop it just takes off so slow, can't squeal the tires at all. Looking for ideas

Buy a Challenger.

Need more detail, for example what gearing do you have, are you running super big tires, is your truck loaded with a cross-bed tool box and hard cover and full hitch set-up and heavy running boards etc., have you changed air filter, any codes, and anything else about your truck that will help.

I do have a toolbox with quite a bit in it but I'm on stock tires. Not sure what gears I have. I'm not worried about doing burnouts or lighting them up I just figured it would if I tried. No codes, I have a cold air intake that could probably use a cleaning

when is the last time you changed the plugs? Could have a week plug that does not start working fully until the higher RPM. I have seen this lots in older veh

545RFE is a dog off the line until 3K because of tall 1st gear in transmission along with most 3:55 geared differentials.
Taller/larger tires than stock amplify loss of torque down low also.

In addition to all the suggestions above it could also be the factory built in throttle lag. Multiple devices out there to address throttle lag. It's a 2009 so the computer is not locked a simple tuner could make a difference and you could do nothing but up idle speed and reduce throttle lag. Or you might consider something like a 9 drive throttle controller. It's about $57 buck on Amazon.
