I am either gonna stick with stock size 275/60/20 or go to 285/60/20 or 285/55/20.

285/55/20
The 285?is the width of the tire in mm's.
The 55 is 55% of the width will be the size of the sidewall.
285 is 11.2 in inches. 55% is 6.16 inches.
So 6.16 X 2 is 12.32 + 20 gives you a height of 32.32
So it looks like 285/55/20 is a good size.
The gap to fender difference should be barely noticeable.
Unfortunately you have to look what tires are available in each given size. Here is a screen shot of tires from tire rack available in 285/55R20. Since you never leave the pavement and don't see snow or ice, mud or A/T tires aren't necessary. You can buy them and they will still roll you down the road, but it will be louder, handle worse, and have more road noise. You will have no issues running an A/T tire for 100% road driving, but it doesn't make sense to have a slightly aggressive off road tread pattern if you will never leave the road...not trying to be a downer, just adding a few nuggets of experience...lol.

From everything you are saying....sounds like you need to widen your wheels to get the tires and wheels YOU want....We can give you suggestions all day but sounds like you have already know what you want. Just my two cents.
I was looking at these Nitto's also, I'm just a little concerned with a 640 tread rating and a 75,000 mile warranty they may be a little stiff in the ride department. I'm going to talk to my tire buddy and see what he says.
