Stock OE thermostat is 203F. This will give you the best results if all you're doing is daily running and fully stock.

I agree take it to the dealer. Those temps are not cold enough to have that kind of effect on the battery. Something else is going on.

Have you verified the injector & coil are getting their signals, it's possible the wiring may have been damaged during the rebuild.

Check the pushrods on cylinder 8 make sure they are clicked in all the way very common when re installing for it to not seat all the way...
