Not really familiar with the Demco products as I prefer using the device designed for the job (a regular fifth wheel hitch)...
HOWEVER, from looking it up I'd say it greatly depends on your fifth wheel as to whether it'll work well with a 6'7" box (they're not 6') or not. If you aren't worried about getting anywhere close to 90° turning, then yes, it'll work no problem. If you want to get close to 90°, then it depends on the configuration of your fifth wheel. Some are designed to accomodate tight turns without a slider hitch in a short box truck, others are not.

Short answer, yes as long as the trailer is designed for shortbed trucks.
