Transmission shouldn't get over 200 degrees Fahrenheit during daily driving. Towing the tranny temp might get up to 220 or so but if the temp got anything higher than 250 then I would stop and let the truck cool down. Here is a cool chart that shows the hotter temps you run the shorter life your transmission will have.
Coolant temp varies depending on your T-Stat and outside temps as well as if you are moving or sitting still. Stock stat is set to come on at 203* and can vary 15-20* or so. I have a 180* stat in mine and it runs right around 185* and on HOT summer days sitting in traffice it can still hit 200-210*
