2019 Ram Classic 3.6L V-6 VVT. Just replaced water pump, thermostat, radiator, hoses and belt. What should be the normal coolant temp? I have hit as high as 228 after repairs. But normally under 220z

Did you check the thermostat to make sure it was working properly before you installed it.These days the odds of getting a bad "new" thermostat seem to be higher then the odds of getting a good one.For $h!ts and giggles you might want to pull it,and check it.Pot of water on the stove, and a meat thermometer are all you need to check it.It’s a 194 deg
I know squat about the 3.6's,but i'd be more worried about the 21 psi of oil pressure then anything. What oil and filter do you run in it.
