Unfortunately I don't have any pics, not sure if I'll be heading out any unlighted roads in the next week. I'll see what I can do.
That would be greatly appreciated. I'm not in any rush- I've got to get a pair of tires on this thing before starting back on the headlights.

To really round out your lighting, use a set of DiodeDynamic SSE3 SAE Pro level fog lights
I had a set of morimotos on my (never ending) list of things to upgrade. Would you get the Diode Dynamics instead?

My only concern is something like nighttime interstate driving where there's enough cars that I can't use highs, but not enough to light the whole road up. I can't imagine the lows (or even lows + fogs) would give off enough light and the right beam pattern to comfortably drive 70-80mph.

I upgraded from the Morimoto fogs to the DiodeDynamic SSE3s, probably one best lighting upgrades I've done in any vehicle.
They're a little pricey but the Pro level is worth the $$, watch for them to be on sale on the holidays through the year.

Yeah, they are definitely pricey. I'll keep my eyes out- I've got a list of stuff I've got to get first, but it's on there

Ugh... I cannot seem to find any budget LEDs under 6000k. Any suggestions? Are ones from gtr/sv4 really worth 3x the price? I'm not trying to light up the whole road, just enough to comfortably go on country roads at night, go on the interstate, etc.

You have gotten good advice here. You have duals which may be worse than mine and my quads are ****. Sometimes you get what you pay for, as I have a lifted 15 and the quads don’t work for me anymore. I’m personally prob gonna buy the morimoto setup with leds for lows and highs. You said you were worried about blinding people. That chipset is made for that housing and will be light years above what you have at the moment. My hikari fog lights are brighter than my headlights. Getting more light from your fogs isn’t awesome so yeah, I need to upgrade my quad setup.
