The 8spd tranny should give you some flexibility. At least compared to the poorly setup 6spd paired with my 2014 6.4 Hemi. With those tires on my truck I'd probably be eyeing 4.56 at least. I'm sure others with direct 8spd experience will chime in.

I usually start with what the stock gearing and tire size is and go from there. You can then calculate what axle gear you would need to get back to "stock" parameters and go from there.

I don't believe there are organized Mall Crawling spots in San Diego.
In my town & the next town over, they close down one of the Main streets
mostly they have nights where your vehicle has to be older than a certain year.
Another week, the people bring 4X4s
Another, may be drag cars

The desert is about 100 miles away

On paper going from 3.21 to around 3.73 puts your RPM's back to stock. However that does not account for the 37's being heavier, more rolling resistance, and more aerodynamic drag. Because of that I would recommend going even a little lower on the gearing so down in the 3.92 to 4.10 gear. That is assuming you want it back to closer to stock levels. The second factor to consider is that I believe you could get down to 3.92 gears as a factory option, meaning they thought that 3.92s and with factory size tires was a decent combination and would provide more "power" and make the truck feel peppier. Taking into account that 3.92s were available on a stock truck you could go down into the 4.56 range and still maintain good freeway manners...and probably the direction I would go. Going from 3.21 to 4.56 should make a noticable difference.
