Don’t want to put my subs under the seat or on top of the seat. One shop talked about taking out the bottom half of the back seat for a build but that’s a no. Anybody have any experience with a build that I could put on the floor of the truck between the console and back seat? Want to put a decent 12 and want it to sound great without having to worry about any issues with box sizing. Is it possible ?

Exactly misfit ! Something in that space. The only thing I’m concerned with is my truck has AC vents in back of the console

yes, that would kill AC to back passengers.

That is a hard recommendation. I could see a custom enclosure where the jump seat. As you stated AC events. I wish I could help further.
