Currently have 6" RCX Lift on 35x12.5x20's and those fit fine, but I'm finding that for the off roading that I do, I should have gone with something with more sidewall.

These next changes may be a little ways down the roads, but I'd like to get some info before I start looking.

So, first question, will either of these wheel fit my truck?
Pro Comp Wheels Part 52-7985R2.5 - 52 Rock Crawler Series - Gloss Black Powder Wheels
Pro Comp Wheels Part 52-7985 - 52 Rock Crawler Series - Gloss Black Powder Wheels

And second, what is the largest tire size that I can fit with a 6" lift, Bilsteins at 2.1" and 1" rear spacer? Would like to know for both my current 20x10 -24 offset and with whichever one of the above would work better.

Looking at something like these, but hoping I can get something cheaper!:
Toyo Tires Part 360390 - 38x13.50R-20LT, Open Country Mud Terrain
I'm sure I would need more lift for these, but curious as to how much more? 6" RCX, 3" BL, 1.4" Bilsteins?

40s on a 4.7 ftw!! What gearing do you have? It'd look wicked but not only are those two tires huge but they are the heaviest probably made in those sizes. I'm sure performance would be lacking. May take you forever to get somewhere but at least it'll look sweet. There's a lot more that goes on with huge tires than just a lift and new rubber you may wanna look into before hand. Maybe a 35" tire on a 17" rim which would be a good price, give your ride some more cushion and go for like a Baja look.

40's may have been a bit of an unrealistic stretch.. But I would still love to go 38's. If I did that I would be regearing to 4.56's. The lift bug is really killing me and I just want to keep going bigger and bigger

Okay. Just so long as you know that you will have to replace the front differential and machine the rear just to get 4.56s in there. Then if you are doing off roading a bit you will wanna look into upgrading axle parts. Those tire sizes are when people start breaking shafts when they off road. Get the tire spinning then it'll catch traction and break shafts.
Pretty steep bill. I was thoroughly disappointed by that finding after I bought my 2012.
